Strawberry Quinoa Stuffed Avocado

Ingredients

2 Tablespoons quinoa flakes (not whole quinoa seeds)

2 medium strawberries, washed, dried and green caps removed; diced

¼ cup water

1 Tablespoon hemp hearts (hulled hemp seeds)

Natural stevia, to taste, if needed

½ ripe avocado, pit removed, peel on

Instructions

Remove about ¼ of the avocado flesh and set aside for another use.

Place avocado on small serving plate; set aside.

In a small microwave-safe bowl, combine quinoa flakes, berries, water and hemp hearts (and stevia if using); microwave on high one minute then stir and spoon mixture into avocado half.

Serve immediately.
