Sea Salt’s Kale Salad

Ingredients

  • 2 bunches kale, stems removed and leaves roughly torn
  • 10 oz. feta cheese, crumbled
  • 3 roasted bell peppers, sliced
  • 1 cup black olives, pitted and halved
  • 12 marinated baby artichokes, halved
  • 1 cup buttermilk
  • ½ cup olive oil
  • 1 tbs red wine vinegar

Instructions

In a salad bowl, mix the kale, feta cheese, peppers, olives, and artichokes. In a separate bowl, whisk together the buttermilk, olive oil, and red wine vinegar. Pour the dressing over the salad, toss, and serve.
