Sea Salt’s Kale Salad
Ingredients
- 2 bunches kale, stems removed and leaves roughly torn
- 10 oz. feta cheese, crumbled
- 3 roasted bell peppers, sliced
- 1 cup black olives, pitted and halved
- 12 marinated baby artichokes, halved
- 1 cup buttermilk
- ½ cup olive oil
- 1 tbs red wine vinegar
Instructions
In a salad bowl, mix the kale, feta cheese, peppers, olives, and artichokes. In a separate bowl, whisk together the buttermilk, olive oil, and red wine vinegar. Pour the dressing over the salad, toss, and serve.
