Asian Beef with Broccoli
Ingredients
2 cups broccoli florets
3 to 4 ounces lean beef, such as flat iron steak, cut into thin strips
1 Tablespoon coconut aminos (in place of soy sauce)
1 teaspoon rice vinegar
1 teaspoon sesame oil
½ garlic clove, minced
Salt & Pepper, pinch of each
1 garlic clove, peeled and minced
½ teaspoon fresh ginger root, peeled and minced
Red pepper strips & sesame seeds, optional garnish
Instructions
Place beef in a bowl with coconut aminos, rice vinegar, sesame oil, garlic, ginger and salt and pepper. Stir, cover with clear plastic wrap and set aside to marinate.
While beef marinates, steam the broccoli for several minutes in the microwave or in a steamer basket over boiling water until tender.
When broccoli is steamed, set aside and cook the beef.
Place a skillet over medium-high heat and add beef and marinade to pan. Stir-fry until beef is cooked through (several minutes). Add broccoli to pan, stir an additional 1-2 minutes, then spoon into a bowl, garnish with red pepper strips and sesame seeds if desired.
