Avocado and Tomato Salad


  • 4 cups avocado, medium diced
  • 2 cups tomato, chopped
  • 2 cups cucumber, peeled and (medium) diced
  • 1 cup red onion, diced small
  • 4 tbsp cilantro
  • 2 tsp garlic, minced
  • 2 tbsp. lime juice
  • 1/4 cup extra virgin olive oil
  • Salt & pepper to taste


Mix all in large bowl & stir gently. Cover & place in refrigerator over night. May serve on a bed of lettuce if desired.
