Beef, Orange and Radish Salad
Ingredients
1 ½ cups baby kale/arugula mix
½ navel orange, peeled and sectioned
4 radishes, sliced
4 ounces lean beef, cut into thin strips (like flat iron steak)
½ Tablespoon coconut oil
Lime wedge, garnish
Instructions
Place greens, orange and radish slices in a salad bowl; set aside.
In a skillet over medium high heat, melt coconut oil and saute beef until cooked through, about 10 minutes.
Place hot beef strips over salad, toss and squeeze lime wedge over top.
