BLT Hummus Bowl


2 strips all-natural, uncured, preservative-free bacon

2 cups lettuce or mixed greens of choice

2 or 3 cherry tomatoes, quartered (halved if very small)

2 Tablespoons hummus

½ Tablespoon extra-virgin olive oil

½ teaspoon dried herbs of choice (oregano, basil or thyme work well)


Cook bacon in skillet over medium heat until desired crispness. Drain bacon after cooking, set aside.

Fill a serving bowl with greens. Top with tomatoes, hummus and bacon. Drizzle olive oil over the top and sprinkle on herbs.

Enjoy immediately.
