Cashew and Cucumber Dressing
                                        
                                        Ingredients
- 1/3 cup cashews
 - 3/4 cup water
 - 1/4 cucumber, seeded and chopped fine
 - 1/2 teaspoon minced onion
 - 1 teaspoons fresh, or 1/4 teaspoon dried dill, or equal amounts of tarragon.
 - 1-1/2 teaspoons lemon juice
 
Instructions
Process cashews in a blender to a fine powder. Scrape bottom and add 1/4 cup water. Blend until smooth. Add remaining water. Place in a small pan and boil over medium heat, stirring constantly for two minutes. Cool. In a small bowl, combine cooled cashews and remaining ingredients. Chill before serving.
