Grass-Fed Beef Stew in Crockpot
Ingredients
- 1-2 pounds of stew meat or chuck roast cut into smaller pieces
- 1/2-1C beef stock or water
- 1 onion sliced
- 1 fennel bulb diced
- 2 celery stalks diced
- 1 small carrot sliced (optional)
- A bunch of fresh green beans cut into smaller pieces or frozen
Instructions
Preheat crockpot on high.
Brown meat pieces in butter on both sides in a fry pan or Dutch oven. Place in crockpot. Add liquid. Add onion salt, chili powder, curry powder, and thyme to the top of the meat. Place onions on top of the meat. Let cook on high for about 2-3 hours.
Add the rest of the veggies to the top of the meat and continue cooking another 2-3 hours until meat and veggies are tender.
Serve in a bowl and enjoy a side of fresh salad with olive oil, sea salt and cracked black pepper and/or a lightly steamed veggie like broccoli, cauliflower, asparagus with butter, ghee or olive oil.
