Greek Village Salad with Shrimp

Ingredients

3 to 4 ounces large white shrimp, peeled and deveined

1 teaspoon olive oil

1 cup cucumber, cubed

1 small tomato, cubed

½ cup yellow bell pepper, diced

2 teaspoons olive oil (additional)

½ teaspoon dried oregano

½ teaspoon dried dill

Salt and pepper to taste

Romaine leaves, garnish

Instructions

Warm 1 teaspoon olive oil in a skillet and cook shrimp approximately 2 minutes per side, until pink and cooked through.

In a salad bowl, toss cooked shrimp with vegetables, remaining olive oil and seasonings.

Serve with romaine leaves.
