Green Goddess Gazpacho with Smoked Salmon
Ingredients
1 ½ cups peeled, chopped cucumber
¼ avocado
1 – 2 Tablespoons water (or coconut milk from a can), as needed to achieve desired consistency (coconut milk will make the soup creamier)
1 teaspoon fresh mint, chopped fine
Dash of garlic powder
Several drops hot sauce, optional
Salt and pepper to taste
3 ounces smoked wild caught salmon
Mint sprig and cucumber slice, garnish
Instructions
Combine cucumber, avocado, 1 Tablespoon water (to start), garlic powder, hot sauce (if using), salt and pepper, then blend until smooth. Add more water (or coconut milk) as needed.
Pour soup into serving bowl, garnish with salmon and mint. Serve immediately or chill before serving. (If you chill first, wait until serving to add the salmon and mint garnish.)
