Hearty Pork Loin Vegetable Breakfast Hash

Ingredients
2 teaspoons coconut oil
4 ounce boneless skinless pork loin chop, cubed
½ cup diced bell pepper (green, yellow, orange, etc.)
½ cup cauliflower “rice” (process raw fresh cauliflower florets in food processor to break down into rice size bits)
½ cup diced mushrooms
1 Tablespoon raw coconut aminos (a lower sodium, healthy replacement for soy sauce)
Instructions
Warm coconut oil in a skillet over medium-high heat. Add cubed pork and stir-cook 7 minutes.
Add vegetables and aminos; stir and cook approximately 7 minutes more over medium-high heat until vegetables reach desired tenderness and pork is cooked through.
Remove from heat and spoon into serving bowl. Serve immediately.
