Raw Courgetti with Cilantro Pesto

Ingredients
2 cups spiral cut zucchini (zucchini “noodles”)
½ cup packed fresh cilantro
2 Tablespoons olive oil
1 Tablespoon chopped raw almonds
½ teaspoon minced garlic
Salt and fresh ground black pepper, to taste
Instructions
Use a spiral vegetable cutting tool to make zucchini “noodles”. Place in serving bowl and set aside.
In a blender (or with immersion blender in a tall, narrow vessel), blend cilantro, olive oil, almonds and garlic until smooth.
Toss pesto with zucchini noodles; add salt and pepper to taste and serve.
