Spinach And Artichoke Breakfast Bake

Ingredients
½ teaspoon coconut oil
2 cups fresh baby spinach leaves, chopped
½ cup artichoke hearts, chopped
1 Tablespoon thin sliced green onion
1 Tablespoon nutritional yeast
2 eggs, lightly beaten
Salt and pepper to taste
Instructions
Preheat oven to 400F and grease a small casserole dish or ramekin (with 2 cup capacity) with coconut oil.
Stir together all ingredients (spinach through salt/pepper) and spoon into prepared baking dish.
Bake 20 minutes, until set.
Serve hot or at room temperature.
