Sage Turkey Sausage with Sweet Potatoes and Mushrooms

Sage Turkey Sausage with Sweet Potatoes and Mushrooms

Ingredients

  • 4 oz. lean ground turkey breast
  • 1 tbsp. fresh sage leaves, finely chopped
  • ¼ tsp. dried thyme
  • 1/8 tsp. garlic powder
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 2 tsp. extra-virgin coconut oil, divided
  • ½ cup grated sweet potato
  • 2 large white mushrooms, sliced

Instructions

In a small bowl, combine turkey, sage, thyme, garlic powder, salt and pepper, mixing until seasonings are distributed throughout turkey. Shape mixture into 2 patties and set aside on a plate.

Heat a skillet over medium heat with 1 teaspoon of the coconut oil. Add patties and cook 4 minutes per side, or until cooked through in center.

Place cooked patties on a clean serving plate, then add remaining 1 teaspoon coconut oil to the skillet (the same one you used to cook the sausage) and sautee sweet potato and mushrooms 4 minutes, until just becoming tender.

Serve sweet potatoes and mushrooms with sausage.
