10-Minute Creamy Tomato Soup
Ingredients
1 cup canned San Marzano tomatoes with liquid
2 Tablespoons hummus
½ tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Combine ingredients in a small saucepan and blend until smooth with an immersion blender OR process ingredients in a blender then transfer to the saucepan if you do not have an immersion blender.
Heat soup until just simmering, about 8 minutes, then pour into serving bowl and enjoy with crisp vegetables.
