2-Minute Flourless Zucchini Protein Muffin


2 tablespoons organic, no sugar added sunflower seed butter (or other pure nut or seed butter)

1 large egg

½ teaspoon ground cinnamon

Pinch of salt

1 cup grated zucchini

½ teaspoon organic, unrefined coconut oil (for greasing dish)


Whisk sunflower seed butter and egg together in a small mixing bowl. Add cinnamon and salt, then gently fold in zucchini.

Pour mixture into a lightly greased (with coconut oil) 2-cup capacity microwave safe bowl or mug.

Cook on high power in the microwave for 2 minutes. Allow muffin to rest 2 minutes before eating.
