3-Ingredient Kimchi Soup
Ingredients
¼ to ½ cup kimchi (with liquid)
3 ounces lean beef, sliced thin or chopped
½ Tablespoon coconut oil
1 cup chicken stock, hot
Instructions
Drain liquid from kimchi and add combine liquid with beef in a bowl; set aside.
Chop kimchi and add to a serving soup bowl; set aside.
Heat oil in a skillet over high heat and add beef/kimchi liquid mixture; stir-fry beef until cooked through, about 6 minutes.
Add beef to bowl with the chopped kimchi and pour hot chicken stock over the top.
Serve immediately.
