Broccoli Parmesan Meatballs

Ingredients

  • 1/2 cup raw almonds,
  • 1 head broccoli florets steamed
  • 1/2 cup shredded or grated Parmesan cheese
  • 2 cloves minced garlic
  • Salt and pepper to taste
  • 1 or 2 lightly beaten egg
  • Olive oil, cooking spray

Instructions

Set oven to 350° F.

Coarsely process almonds, set aside. Coarsely process broccoli, add to almonds. Add cheese, garlic, salt & pepper, then blend with two forks. Add enough egg to use a scoop.

Form them gently with hands into 12 balls. Place into well-sprayed paper cups. Place about 3 tbsp. extra virgin olive oil in a cup, dip pastry brush into oil and pat tops of unbaked balls.

Bake approximately 20 minutes.

Cool briefly to handle, remove paper while warm, place single layer in freezer, then toss frozen into container and keep frozen for future use.
