Cod with Roasted Tomatoes, Capers and Cauliflower
Ingredients
- 4 oz. cod (or other white fish) fillet
- 8 grape tomatoes
- 1 tsp. capers
- 1 – 2 cups cauliflower florets
- 2 tsp. olive oil
Instructions
Preheat oven to 375 F and line a baking sheet with foil.
Place cod on foil, top with tomatoes and caper, drizzle with 1 teaspoon oil and wrap. On the same baking sheet as cod, place cauliflower florets and drizzle with remaining 1 teaspoon oil.
Cook 15 minutes, remove from oven, carefully unwrap fish and transfer to serving plate. Serve with cauliflower.
