Creamed Eggs over Asparagus
Ingredients
6 asparagus spears
2 hardboiled eggs, peeled and chopped
¼ cup coconut milk
1 Tablespoon mashed avocado
½ Tablespoon nutritional yeast
Pinch of salt
Instructions
Steam asparagus spears in a shallow dish with 2 Tablespoons water in the microwave on high or in a steamer basket over boiling water on the stovetop for 4 – 5 minutes.
Transfer steamed asparagus to a serving plate.
In a small saucepan over medium high heat, combine milk, avocado, nutritional yeast, and salt. Heat until warmed through and mixture begins to thicken, about 4 minutes.
Turn off heat, stir in chopped eggs and spoon over asparagus. Serve immediately.
