Easy Chimichurri Sauce
Ingredients
- 1 cup firmily packed fresh parsley, trimmed of thick stems
- 3-4 garlic cloves
- 2 Tbsps fresh oregano leaves (or 2 teaspoons dried oregano)
- 1/2 cup olive oil
- 2 Tbsps red wine vinegar
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
Finely chop parsley, oregano and garlic in food processor. Transfer to bowl and stir in: vinegar, salt, pepper and olive oil. Serve immediately or refrigerate. Bring to room temperature before serving.
Use this with lettuce roll-ups, fish, scrambled eggs, or grass-fed beef!
