Good Morning Bacon Veggie Hash

Ingredients

2 slices uncured, preservative-free bacon, cut into bite size pieces

½ cup fennel, diced

½ cup zucchini, diced

½ cup onion, diced

½ cup red or yellow bell pepper, diced

1 Tablespoon fresh sage leaves, minced

1 sprig fresh thyme

Salt & Pepper to taste

Instructions

In a large skillet, cook bacon over medium heat until lightly crisp, then remove bacon to a paper-towel lined plate to drain. Reserve fat in skillet for cooking vegetables.

Add fennel, zucchini, onion and pepper to the skillet and top with sage and thyme. Cover and cook over medium-high heat until tender, about 8 minutes.

If your bacon wasn’t very fatty, you may need to add a teaspoon or two of coconut oil to the skillet.

Return bacon to skillet when vegetables are tender, stir to reheat bacon.

Discard the sprig of thyme, then serve hash immediately.
