Greek Chicken with Wilted Greens
Ingredients
4 ounces skinless, boneless chicken breast
½ teaspoon oregano
Salt and pepper
2 teaspoons olive oil
2 or 3 Lemon slices
4 Kalamata olives
¼ cup chicken stock
2 cups dark leafy baby greens
1 cherry tomato and 1 Tablespoon diced avocado, optional garnish
Instructions
Place greens in a serving bowl and set aside.
Warm a skillet over medium heat and add oil, oregano, salt and pepper, then add the chicken breast, turning to coat in oil and seasonings.
Add lemon slices and olives.
Cook chicken 4-5 minutes per side then add chicken stock, reduce heat to low and cover skillet. Cook 5 minutes more.
Remove skillet from heat and transfer chicken, lemon slices and olives to salad bowl, arranging over greenery. Drizzle remaining pan liquid over greens.
Garnish with a cherry tomato and avocado if desired.
