Herbed Chicken Breast over Butternut Mash
Ingredients
4 ounce boneless, skinless chicken breast
1 teaspoon coconut oil
1 teaspoon dried herbs (like sage, thyme, oregano or your favorites)
½ cup butternut squash cubes
1 teaspoon coconut oil, additional
Instructions
Preheat oven to 375F and line a baking pan with foil.
Brush chicken with coconut oil, then sprinkle with herbs and place on pan.
Toss butternut squash with remaining coconut oil and place on pan with chicken.
Cook 20 minutes, until chicken is cooked through and squash is tender.
Place squash on serving plate, mash with a fork, top with chicken and serve immediately.
