International Omelet

Ingredients
1 teaspoon coconut oil
2 large eggs, lightly beaten
Salt and pepper to taste
1 Tablespoon sundried tomatoes (in oil, drain oil)
1 Tablespoon mild chili peppers, diced
1 Tablespoon goat cheese crumbles
Instructions
In an omelet pan or small skillet, melt coconut oil over medium heat.
Add salt and pepper to beaten eggs, then pour eggs into hot pan. Allow eggs to set 30-45 seconds, then use a spatula to pull the edges in so that uncooked egg can run underneath at the edges. Continue until the top of the omelet is glossy but not runny (this only takes about 1 minute)
Turn off heat and top omelet with tomatoes, peppers and cheese. Fold over and transfer to serving plate.
