Quick Fried Pork Cauli Rice
Ingredients
½ Tablespoon coconut oil
4 ounces diced pork
2 Tablespoons onion, diced
2 Tablespoons carrot, shredded
1 cup cauli-rice (pulse fresh, raw cauliflower in food processor until the consistency of rice)
1 cup cabbage, shredded
½ Tablespoon coconut aminos (a soy-free substitute for soy sauce)
Pinch of ground ginger
Salt and pepper, to taste
Sesame seeds, garnish, optional
Instructions
In a skillet, warm oil and sauté pork with onions and carrots until pork is cooked through and vegetables are tender, about 8 minutes.
Add cauli-rice, cabbage, coconut aminos, ginger and salt and pepper. Stir-fry 5 minutes.
Top with sesame seeds if desired and serve immediately.
