Quick Salmon with Mushrooms
Ingredients
- 4 tbs olive oil
- 3 garlic cloves, crushed
- 3 shallots, finely sliced
- 1 tsp ginger, dried or fresh
- 4 skinless salmon fillets
- 1 tbs sesame oil
- 2 cups sliced fresh mushrooms
- ½ cup cilantro, chopped
Instructions
Heat a frying pan over medium heat and add 2 tablespoons of the olive oil, garlic, shallots, and ginger. Cook until it sizzles, then add the salmon fillets and cook through (about 3 minutes on each side). Set aside. Heat the remaining olive oil and sesame oil in the pan over medium heat. Add the mushrooms and cook for 3 minutes, stirring constantly. Drizzle the mushrooms over the salmon and garnish with the cilantro. Serve with a side of steamed vegetables.
