Baked Salmon Filet with Strawberry Fennel Avocado Salsa
Ingredients
For the salmon:
4 ounce salmon filet
Salt and pepper
For the salsa:
¼ cup fennel, diced
¼ avocado, cubed
2 medium strawberries, washed, green cap removed and diced
2 teaspoons olive oil
1 teaspoon lime juice
Salt and pepper to taste
Instructions
Preheat your oven to 375F and line a baking sheet with foil.
Place salmon filet on foil, sprinkle with salt and pepper and bake 15-18 minutes, until cooked through.
While the salmon bakes, prepare the salsa by combining all ingredients in a small bowl and gently stirring.
When salmon is cooked through, serve it immediately over a bed of greens and top with the salsa.
