Salmon & Vegetables in Parchment
Ingredients
4 ounce salmon filet
¼ cup white button mushrooms, sliced
½ cup zucchini cut into spears
¼ cup diced tomato
1 – 2 sprigs fresh thyme
Salt and pepper to taste
1 teaspoon lemon juice
1 teaspoon olive oil
Instructions
Place a large piece of parchment paper on a baking sheet. Preheat your oven to 400F.
Place salmon filet on parchment, skin side down, then top with mushrooms, zucchini, tomato and thyme. Salt and pepper, then drizzle with lemon juice and oil.
Wrap the salmon/veggies tightly in parchment, then place the pan with fish packet into the oven. Bake 20 minutes, remove from oven, then allow to sit 5 minutes before opening packet. Transfer parchment packet to serving plate, unwrap and enjoy.
