Breakfast Barbecue Chicken

Ingredients

4 ounces boneless skinless chicken breast, cubed

1 garlic clove, minced

½ – 1 teaspoon hot sauce, to taste

Salt & Pepper, to taste

2 teaspoons coconut oil

½ cup onion, diced

½ cup fennel diced

½ cup diced tomato

¼ cup chicken broth

Instructions

Toss chicken breast cubes with garlic, hot sauce and salt and pepper.

Warm coconut oil in a skillet over medium-high heat; add chicken and stir-cook for 5 minutes.

Add onion and fennel, cook 5 minutes more, then add tomato and broth; cover and cook 5 additional minutes, or until vegetables are tender and chicken is cooked through.

Serve with additional hot sauce, if desired.
