Caprese Stuffed Chicken Breasts
Ingredients
4 or 5 ounce boneless, skinless chicken breast
½ ounce cubed fresh mozzarella cheese
2 Tablespoons diced fresh tomato
1 Tablespoon fresh basil, chopped
Salt and Pepper, to taste
Instructions
Preheat your oven to 350F and line a baking sheet with foil; grease lightly.
Place chicken breast in a large freezer type zip bag or between 2 pieces of parchment or butcher paper and pound until about ½-inch thickness.
Place chicken breast on prepared pan, place cheese, tomato and basil in the center of the chicken breast, then carefully roll up the chicken around the other ingredients.
Turn chicken breast roll so that the side where the edges meet are down on the pan.
Sprinkle salt and pepper on top and bake 25 minutes, or until chicken is cooked through.
Transfer chicken to a plate with mixed greens and serve immediately.
